Cupcakes from scratch!

I made my first cupcakes from scratch tonight, and they were so awesome I just had to share them with you! A few days ago Chris and I had a little impromptu date at Barnes and Noble, and I picked up this book for $8. I really only bought it because of this recipe, which is totally silly, but I'm happy I did! I made these "Pistachio Cupcakes with Lime Frosting" and it was way easier than I thought it'd be. It makes me want to bake more :) The only bummer is that I don't have a food processor, and I just about broke my blender trying to grind up the pistachios!

These were seriously SO GOOD! I don't think I'll ever make cupcakes from a boxed mix again!

    YOU SHOUD DO A SUNDROP CAKE/CUPCAKE! OMG YESSSS! have you ever tried doing a soda cake before? they're so good with lemon/lime drinks like sundrop.

    Those look yummy! I love pistachios and cupcakes but I've always been afraid to try pistachio cupcakes. I don't know I just can't imagine it haha! One day I'll try them though, I just need to overcome that little voice in the back of my head haha!

    Pistachio is my favorite!
